This is a sapling vineyard "impupato" from Pachino with high density crops (7,000 vines / hectare) which can only be worked by hand. It has been implanted with grafting on the field from a "mass selection" carried out among the very rare old vines of Muscat of Noto of the territory. The black-clay soil gives the white muscat a less aromatic intensity. Its territorial essence is revealed only years after the harvest, giving floral and dried fruit aromas. The sapling vines give a low yield of grapes and must. The ripe grapes are vinified in steel with its skins for about fifteen days. It matures in non-toasted barriques and in smaller barriques, obtained from mulberry trees, a typical fruit tree of the Val di Noto. This tree has a neutral wood that accompanies the maturation of this wine for at least two years, enhancing the characteristics of the evolved Moscato di Noto. To fully enjoy the wine, we recommend serving it between 14 ° and 16 °.
