Rosso di Contrada
Don Paolo

Wine linked to family affections, obtained from a plot of just over half a hectare, exposed to the East, at 77mt above sea level, clayey yellow soil, cultivated with bilateral cordon, hence one of the two wines with less than 10mg / l of SO2 self-produced . From this vineyard, we produce one of the most spicy Nero d'Avola, very horizontal, rich and full, with a more contained freshness, which leaves room for a more marked tannin. It ferments in steel tanks for fifteen days, matures in the tank until the following spring, and then refines in the bottle for at least six months.
